Adapted from Ina Garten’s Tomato Feta Salad. This is a great side that goes with anything. Fresh and healthy, add diced chicken and this could be a meal all on its own.
Halve tomatoes, slice red onion, slice yellow pepper. Halve the cucumbers, scoop out the seeds and slice into big pieces. Dice the feta into chunks. Chop parsley and julienne the basil. Mix the vinegar, olive oil, salt and pepper in a small bowl to make the vinaigrette.
Combine all ingredients in a large bowl. Toss to combine. Add more olive oil and vinegar if it’s a little dry to you. Serve at room temperature.
