This fresh and tangy salad is perfect to accompany a light protein like grilled fish or to cut through something more fatty or creamy.
Peel cucumber if desired. Dice tomato, avocado, onion and cucumber. You can also use a pint of cherry tomatoes if you like. Add vegetables to a bowl and add remaining ingredients. Stir gently to combine, taking care not to break up avocado too much. Leave the dish to marinate for a few minutes on the counter, or keep in the fridge until mealtime. The lemon juice and salt will leave the onion nice and sweet and take the bite out of it. This is great as a side or served right on top of a protein or even on toasted bread!
