This is my Uncle’s recipe and it is just wonderful as a side for sausages and other meats. Any good Slovak will love it!
Seed and devein peppers, cutting them all into long strips.
Coat a large frying or saute pan with the olive oil. On med/high heat add: peppers, onion, garlic. Season with salt, pepper, and herbs.
Saute until peppers begin to get slightly limp. Add Vermouth and cover and simmer until tender (15-20 minutes).
Great as side dish for polish sausage or other meats.
