Extra tasty roast potatoes. Extra easy, too.
Wash and dry potatoes. Cut them into quarters lengthwise.
Microwave them in a Ziploc bag for about 10 minutes. They should be just tender.
Pour about a quarter of a cup of olive oil over the hot potatoes. I usually do this over the sink because my bag invariably starts to leak. Make sure the potatoes are all covered in oil.
Tip in about half a packet of french onion soup mix. Try to get an even cover over the potatoes by mixing them around in the bag. I like a lot on mine so I usually add the rest of the packet!
Spread potatoes evenly onto a baking tray. I line mine with foil and then with with a sheet of baking paper. (Washing up is then much easier!)
Pop into a preheated oven. Bake at 175C (350F) for about 45 minutes or until brown and crispy on the edges.
NOTES:
*The soup mix packet I use is 55 grams. In Australia it is called ‘French Onion Soup” mix. I have used various types in Vienna. Some I have just had to guess by the pictures on the packet (my German is still progressing). As far as I can tell, any type of dry soup mix with an onion base works fine.

We actually jazz up this recipe to add some veggies and kill two birds with one stone (so to speak).
Follow the instructions above, instead of using a baking tray use a casserole dish so it’s deeper, add 1 bag of frozen mini brussel sprouts (I know – no faces or gagging noises!) Stir everything together and bake as instructed above.
Using the mini brussel sprouts cuts the twangy taste of that veggie and makes it more palettable for kids – add the zing and crunch of the soup mix and it’s a winner! My 5 yo son will gripe, but always admits the brussel sprouts are yummy – and you’ve got your starch and veggie in one quick and easy dish!
You can even let the kids help you put it all together and get it in the oven!

Made these tonight for dinner. I make a similar recipe that I got from my mom which I have shared here also. But I quite liked yours as they had the crispy edges.

This is a staple in our house. On the US packages, they recommend stirring them a bit on the cookie sheet/pan about half way through the alloted time. We also add diced celery.
This is a very good side with beef , and we’ve used the Liptons Savory with chicken. I recommend it very much.
