Very similar to my Homefries recipe, but it’s the little differences that count.
Wash and slice the potatoes into the size of strip you prefer (thin fries, steak fries, whatever your preference). Put the water and sugar into a bowl, mixing the sugar to dissolve it. Add the potatoes to the bowl and add more water if needed to completely cover the potatoes by at least half an inch. Place the potatoes in the refrigerator and let them soak for 24 hours.
Heat your deep fryer or a gallon of oil in a pot to 325 degrees. Drain and dry the potatoes completely with paper towels before placing them in the hot oil (water + oil = nasty mess and possible scarring). Place the potato strips in the hot oil and allow them to cook for 3 minutes. Remove the potatoes and drain them in a single layer on a sheet tray covered with paper towels for a half hour. Raise the temperature of the oil to 375 degrees. Place the partially cooked potatoes in the hot oil and allow them to cook for 5 minutes or until they are a nice golden brown. Drain the potatoes and toss them with salt. Serve hot.
