Description

Baked potatoes with a fluffy center and crispy outside.

Ingredients

  • 6 whole Large Baking Potatoes
  • ¼ cups Vegetable Oil
  • 2 Tablespoons Kosher Salt

Preparation

Wash potatoes well. Using a fork or sharp knife, poke holes all over the potatoes and rub them with the oil then sprinkle with the salt. Put them in a round stoneware or similar baking dish.

Preheat oven to the temperature that corresponds with however long you have to cook the potatoes.

Use the chart below:
45 minutes at 400 F.
60 minutes at 350 F.
90 minutes at 325 F.

Once oven is preheated put the dish into the oven and bake for the above time.

I never put mine in a dish– I just put them directly on the oven rack, making sure there is at least two inches between each potato. I bake them at about 400°F for about an hour. The skin always comes out crispy and the inside fluffy and tender. Sometimes the simplest recipes are the BEST! Thanks for sharing, Heather!
