A light and refreshing baked tomato, stuffed with feta cheese, scallions and corn chips.
Preheat oven to 350 F. Line a rimmed baking sheet or baking dish with parchment paper; set aside.
Cut the tomato in half, horizontally. Scoop out the center of the tomato, leaving a tomato shell. Cut the pulp into small pieces and place in a small bowl. Add the feta cheese, crushed tortilla chips, scallions, parsley and olive oil; mix well.
Spoon the tomato and cheese mixture into the tomato shells. Place tomatoes on the prepared baking sheet. Bake in the oven for 15 minutes or until tomatoes have softened and cheese is soft.
