Red pepper, corn and chives make this potato salad as flavorful as it is colorful.
Bring a pot of water to boil, add the potatoes and boil them for about 5 minutes or until potato cubes are fork tender. Drain the water off the potatoes and let them cool in a mixing bowl.
Once potatoes have cooled some add red pepper, corn, chives, mayonnaise, sour cream and seasonings (wait to add the salt and pepper). Stir well, taste and add salt if needed. Add a pinch of pepper.
