Description

Red pepper, corn and chives make this potato salad as flavorful as it is colorful.

Ingredients

  • 5  Medium-sized Potatoes, Cut Into 1 In Cubes
  • ¼ cups Red Pepper, Diced
  • ¼ cups Frozen Corn, Thawed
  • 3 Tablespoons Chives, Chopped
  • ¼ cups Mayonnaise
  • ¼ cups Sour Cream
  • ½ teaspoons Celery Salt
  • ½ teaspoons Celestial Seasoning's Beau Monde Seasoning Or Other Seasoning Salt
  • ⅛ teaspoons Cayenne Pepper
  • Salt And Pepper, to taste

Preparation

Bring a pot of water to boil, add the potatoes and boil them for about 5 minutes or until potato cubes are fork tender. Drain the water off the potatoes and let them cool in a mixing bowl.

Once potatoes have cooled some add red pepper, corn, chives, mayonnaise, sour cream and seasonings (wait to add the salt and pepper). Stir well, taste and add salt if needed. Add a pinch of pepper.
