This is a satisfying egg recipe using a Southern favorite: grits! Serve with a meat or vegetable as a meal or put on your breakfast buffet. I served it with a family favorite: shrimp.
Preheat oven to 350ºF and grease a 9×12 casserole.
Boil water, add grits, reduce heat to medium-low and stir until thickened (10-12 minutes). Stir in seasonings, margarine, chiles and beaten eggs. Stir and cook 2-3 minutes.
Stir in half of the cheese. Pour into the casserole dish. Top with the remaining cheese.
Bake 40 minutes.
