Easiest and tastiest way to roast squash!
Preheat oven to 425 F.
To cut squash in half, cut a sliver of the top and bottom ends off. Stand the squash up (bigger end down) and with a sharp knife cut straight through from the top to the bottom. Scoop out the seeds and guts and discard them.
Get out your baking dish and lay them in there, cut side up. Next slather on a bunch of butter (I really cover it up) and season with salt and pepper.
Bake until fork tender, about one hour. Use in soups, salads, or just eat it as is!
