For a fiber-full, low-fat Mexican side dish, try these “refried” black beans.
Dump beans in a pot on the stove top and set on medium heat. Add remaining ingredients and stir. Allow to cook for 20 minutes or until beans are done and most of the liquid is cooked off.
While warm, mash with a potato masher until refried beans texture is achieved and enjoy!
Fantastic when paired with my Spicy Tequila Beef Tacos.
I like my food spicy so if you don’t, the cayenne pepper can easily be omitted. I may add even more next time!
