Simple orzo with parmesan and basil. Makes a great side dish for almost any meal.
First, melt butter in a skillet over medium-high heat. Add the orzo and sauté for about 2 minutes, until slightly brown.
Add broth and bring to a simmer until orzo is tender and liquid is absorbed, about 15 minutes.
Right before serving, mix in parmesan and basil. Season to taste with salt and pepper.
Note: for a creamier variation of this recipe, try stirring in 2 tablespoons of plain yogurt thinned with a little milk.
