I clipped this recipe from the newspaper years ago and have been making it ever since. It is simple to prepare and goes so well with spaghetti or lasagna. This is one occasion where powder garlic works better than fresh.
Place spinach and water in large non-stick skillet over medium heat. Cook until all of the moisture is evaporated. In the meantime, place remaining ingredients in a measuring cup. Mix well. Pour over spinach. Blend quickly to thouroughly incorporate the egg mixture. Reduce heat and let simmer about 10 minutes.
I usually add more cheese on top when I serve it. Enjoy!
