Hash Brown Casserole – easy enough for a weeknight treat and special enough for a holiday feast.
Preheat oven to 375F.
Mix sour cream, half and half, 2 cups cheese, cream of chicken soup, green onions, salt and pepper in a 9×11 casserole dish (doesn’t need to be greased). Once combined add hash brown potatoes and mix well.
Once combined, smooth out the top of the casserole and poke pieces of the sliced butter into the casserole. Make sure butter is cold. It will make it easier to poke into the casserole.
Sprinkle reserved 1/2 cup cheese on top.
Place into the oven for 1 hour and 20 minutes or until golden brown.
