Three ingredients plus one grill equals an irresistible, addicting and flavorful dish.
Heat the grill to medium heat.
Tear off a large sheet of aluminum foil, about 14 inches in length. Place the diced potatoes and chopped chives in the center of the foil. Fold up the sides of the foil to create a square ’bowl’ containing the potatoes. Drizzle olive oil over the potatoes. Season well with salt and pepper. Match up the ends of the foil and fold over to create an airtight packet. Packet must be firmly sealed so that oil does not seep from the packet during grilling.
Place the packet on the grill and cook for about 5 minutes. Then use tongs to rotate the packet to one side (one quarter turn). Cook another five minutes. Repeat this process on each side, until each of the four sides has cooked for 5 minutes. Remove packet from the grill and very carefully peel open the packet (the steam is extremely hot). Serve.
