A yummy way to use up beets from your garden or the market, and a very purple side dish!
Steam beets, ginger and 3/4 of the onion for 15-20 minutes.
Combine the remaining ingredients, include the raw onion, in a medium sized bowl.
Put steamed ingredients in bowl, cover at room temp for 30 minutes to one hour.
Drain, chill and serve.
