“Chicken Bucket” Coleslaw

Description

Tastes just like the coleslaw you get at a certain chicken establishment famous for more than 10 but less than 12 herbs and spices.

Ingredients

  • ½ cups Mayonnaise
  • ⅓ cups Granulated Sugar
  • ¼ cups Milk
  • ¼ cups Buttermilk
  • 2-½ Tablespoons Lemon Juice
  • 1-½ Tablespoon White Vinegar
  • ½ teaspoons Salt
  • ⅛ teaspoons Ground Black Pepper
  • 1 Tablespoon Onion, Pulped (see Instructions)
  • 16 ounces, weight Coleslaw Mix

Preparation

In a large bowl, combine the mayonnaise, sugar, milk, buttermilk, lemon juice, white vinegar, salt and pepper. Using a microplane or the fine side of a box grater, grate a chunk of onion until you have one tablespoon of onion pulp. Add the onion pulp to the mayonnaise mixture and whisk until smooth. Add the coleslaw mix and toss to combine. Transfer to an airtight container to chill.

You can serve this immediately, but it’s better if it sits in the refrigerator for a few hours. The flavors have more time to work their magic. I like to open the fridge and shake the container vigorously every half hour or so, just to make sure it’s “marinated” evenly. The final product will be a little soupy, so use a slotted spoon or drain off some of the milk mixture before serving (but not too much, because it’s really good stuff). Now all you need is fried chicken and warm biscuits!

One additional note:
If you truly want to pass this off as “Chicken Bucket” coleslaw, mince your coleslaw mix into tiny pieces before mixing this up.

Made this last night and it was a big hit. My family thought it was great. I didn’t use as much sugar as called for in the recipe, and I used a little less milk than called for. I’ll be making this recipe a lot this summer! Thanks for a delicious recipe.

This is my new “go-to” side dish. Folks at the office raved about it! It really does taste just like the real thing. Mix it up and be sure to give it at least a few hours to “marinate”. The flavor really develops over time.

We really liked this and my husband who is very picky about coleslaw even liked it. The only reason I’m giving it 4 instead of 5 is because I don’t think it tastes just like that certain restaurant.

This is the best coleslaw I have ever made. Made it to serve on pulled pork sandwiches and it was perfect. Served the rest tonight with buttermilk chicken and hubby ate two helpings. That is a rare thing! I have found my go to recipe!
