A great side dish that is also a delicious and healthy snack: it’s crunchy, zesty, and light!
Preheat oven to 450ºF.
Halve broccoli crowns and trim about ¼ inch off the stalks. Toss broccoli in olive oil and lemon juice. Sprinkle in the breadcrumbs and toss to coat the broccoli.
Spread seasoned broccoli on a nonstick baking sheet or a parchment paper-lined baking sheet. Roast for about 18–20 minutes or until breadcrumbs are browned.
