A new way to eat asparagus!
Preheat oven to 400 F. Grease a rimmed sheet pan and set aside.
Thaw your frozen asparagus on the counter for 15 minutes. If you’re using the fresh stuff, wash and trim the ends. Add the panko breadcrumbs and lemon zest into a shallow dish and toss to combine. Crack the egg into another shallow dish and add the lemon juice. Whisk until incorporated.
Coat each asparagus spear in the egg/lemon and then in the breadcrumb mixture. Put them in a single layer on the greased baking sheet and bake for 10 minutes.
Serve with additional lemon slices and enjoy!
