Orzo and mushrooms together in a cheesy wine sauce.
Melt the bacon grease (or butter) in a skillet over medium heat. Stir in the onions and mushrooms, and cook until golden brown. Mix in orzo, garlic and butter. Cook and stir for 3-4 minutes, until butter is melted and orzo is coated.
Pour broth and wine into the skillet, and bring to a boil. Reduce heat to low. Season with salt and pepper. Cook for 7 to 10 minutes, or until orzo is done. Stir in the Parmesan cheese and parsley before serving.
