Served with grilled shrimp, these grits are a lighter tasting alternative to the average Southern shrimp and grits. Cheddar and corn take the place of sausage to add flavor and texture. My husband and kids love it. I use the frozen corn when pinched for time, but it’s sooo good with fresh cooked corn. Just add extra butter if using fresh corn.
Bring water, milk, and salt to a boil.
While waiting for above to boil, microwave corn according to package directions.
Now, back to the boiling liquid. Once boiling, add grits and reduce heat to low/medium. Cook slowly for about 5 minutes, stirring occasionally. Remove from heat and fold in cheese, corn, and butter.
Serve immediately.
Goes great with grilled shrimp, or as a breakfast side. You can make polenta cakes with leftovers!
