This recipe is the perfect side dish to any meal. Everything is better with bacon.
In a large skillet, saute the onion and bacon in the olive oil on medium-low until bacon starts to get crisp, about 10 minutes. After the bacon is crisp, remove the bacon-onion mixtue with a slotted spoon and set aside. Add the corn and seasonings to the skillet and cook on medium-high heat until the corn is heated through and any moisture is cooked out. Return the bacon-onion mixture back to the skillet and stir it all together. Remove from heat. Stir in the green onions.

Yes, I think it would be fine with canned corn. Just drain well.

OMG! This recipe is AWESOME! I added fresh sliced jalapenos for an extra kick…and WOW! I served it with BBQ chicken breast and it was OUTSTANDING!!!!

I will be trying this asap! My family loves corn and I am sure this recipe will be another great way to serve it. (and I will try kim4wsl’s idea of putting it in hash browns IF we ever have leftovers!!)
