My DH said he hated coleslaw … until I made this one. He can’t get enough! I think it’s because it is very sweet. In my opinion, though, the tarragon vinegar is what makes it fabulous.
Several hours in advance or the day before, mix together all ingredients except cabbage mix. Just put them into a bowl and put it into the refrigerator for several hours or overnight. This gives the sugar time to dissolve. An hour or two before serving put the cabbage into a large bowl and pour dressing over it. Mix well. Stir a couple of times before serving.
