The ginger and sweet potato combination is amazing!
Wash the sweet potatoes, prick all over with a fork and microwave on high for 15 minutes or until tender.
Leave to cool a little, then peel off skin.
Mash the sweet potatoes in a bowl a little, Add the rest of the ingredients, then continue mashing until combined.
This is yummy just as it is, or you can drizzle it with more coconut cream and crumble a graham cracker over the top for a little extra yum.
And it is so yum!
