This recipe is super easy and is perfect to make ahead and add as a side (cold or hot) to your main dish, your salads, lunch boxes or even for a snack. You simply spread some cinnamon sugar butter on your sweet potato slices, roast them and enjoy some comfort food that is as good for you as it tastes.
Preheat oven to 400ºF.
In a small dish, combine butter, sugar, salt and cinnamon.
Slice sweet potato into 1-inch slices. Spread butter mixture over each side of each slice.
Place on a pan and roast for 15 minutes. Turn over and roast 10 additional minutes. Poke with a fork to see if soft enough. If needed, cook longer.
Remove from oven and allow to cool slightly before serving.
