This creamy corn dish is a great side dish for any meal. It can be served hot or cold and is a healthy alternative to the traditional cream corn. It gets some tang from the lime, heat from the peppers, and creamy texture from the sour cream.
1. Over medium heat, melt butter and add in jalapenos and garlic. Saute for 1 minute and add in corn kernels. Cook the kernels for 7 to 8 minutes until they start to cook through, stirring occasionally. Pour in lime juice, lime zest, red pepper flakes and cilantro; continue to cook for 4 to 5 minutes, until the kernels are cooked through.
2. Pull the corn off the heat and mix in sour cream. Top with fresh cilantro.
