Description

This creamy corn dish is a great side dish for any meal. It can be served hot or cold and is a healthy alternative to the traditional cream corn. It gets some tang from the lime, heat from the peppers, and creamy texture from the sour cream.

Ingredients

  • 1 Tablespoon Butter
  • 2 Tablespoons Jalapenos
  • 1 clove Garlic
  • 2 cups Corn Kernels
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Lime Zest
  • 1 pinch Red Pepper Flakes
  • ¼ cups Cilantro, Plus More For Garnish
  • 1 Tablespoon Sour Cream

Preparation

1. Over medium heat, melt butter and add in jalapenos and garlic. Saute for 1 minute and add in corn kernels. Cook the kernels for 7 to 8 minutes until they start to cook through, stirring occasionally. Pour in lime juice, lime zest, red pepper flakes and cilantro; continue to cook for 4 to 5 minutes, until the kernels are cooked through.

2. Pull the corn off the heat and mix in sour cream. Top with fresh cilantro.

Wow. I have a new favorite corn side dish. I used 6 ears of fresh corn to make 2 cups of kernals. I was so surprised that the little bit of sour cream went as far as it did. So good!
