Spicy, sweet and smooth, these sweet potatoes pack a kick. Great as a side dish for an apple cider pork tenderloin or blackened chipotle salmon.
Peel and cube the sweet potato. Add to sauce pot and cover in water. Boil until fork tender, about 10 minutes.
Once boiled, drain and return potatoes to pot. Add butter or margarine and mash with a potato masher or fork until at desired consistency. Once mashed, stir in salt, chopped chipotle pepper and chipotle sauce until mixed. Then stir in maple syrup.
Serve immediately.
