A Southwestern, sweet and spicy version of baked beans.
Open the can of chipotles; take 3 out, remove stems and chop. Take 2 Tbsp of adobo sauce from the can and set aside. In a dutch oven or other sturdy pan, saute the chipotles, onions and garlic in the olive oil until soft. Combine all other ingredients in the pan and stir gently until combined.
Bake at 325 degrees for 2 hours. Check occasionally and add water if beans become too dry.
