Cheesy Potato Casserole

Description
A variation on your typical mashed potatoes. Delish!
Ingredients
- 8 whole Russet Potatoes, Peeled
- 8 ounces, weight Cream Cheese
- 8 ounces, weight Sour Cream
- ¼ pounds Butter
- 1 cup Green Onion, Chopped
- ¼ teaspoons Garlic Salt
- 1 teaspoon Fresh Cracked Pepper
- ½ cups Grated Cheddar Cheese
Preparation
Preheat oven to 350 degrees.
In a large stockpot, boil potatoes until soft. Drain the liquid and mash potatoes in the same pot. Stir in cream cheese, sour cream, butter, onions and seasonings. Mix well. Pour into a buttered casserole dish. Sprinkle grated cheese on top and bake for 1 hour.
