This is a vegetable side that I actually get requested to make. Although I’m not sure how much of that is because of the cauliflower and how much is thanks to the tasty cheese sauce!
Preheat oven to 200 degrees C (390 degrees F).
Remove leaves from cauliflower head and break the head into smaller florets. Place florets in a medium pot and cover with water. Add some salt to the water and bring to a boil. Cook cauliflower until a knife can easily pass through it, about 5-7 minutes. Be sure not to overcook the cauliflower, it should not feel overly soft. Drain cauliflower and place it in a 9 by 13″ ovenproof ovenproof dish with high sides.
To make the cheesy sauce, melt the butter in a medium skillet, over medium-low heat. Add flour and cook for several minutes, whisking constantly to prevent lumps from forming. Once butter/flour mix has lightly browned, gradually add the milk, whisking constantly. Cook mixture until it boils and thickens, stirring all the while to prevent lumps. The sauce thickens further in the oven so add extra milk if you prefer a runnier sauce.
Once sauce has reached the consistency you desire, reduce heat to low and add cheese, cayenne and salt and pepper to taste.
Pour sauce over cauliflower and bake in the oven for 15 minutes, or until bubbling and lightly browned on top. Let stand several minutes before serving.
