This is a great side dish for roast beef.
Cook onions in a pot of salted water until nearly tender, about 10-15 minutes. Drain off the water and place onions in a greased 1-quart casserole dish (use one with a lid—you’ll need it later).
Preheat oven to 350°F.
Melt butter in a saucepan over low heat. Mix in the flour and salt and cook over low heat for 2 minutes. Add milk. Cook, stirring until it comes to a boil. Stir in cheese. Pour the mixture over the onions and put the lid on.
Bake covered for 35 minutes at 350°F. Remove the lid and cook 5 minutes more to brown the top.
