A simple stacked and baked sweet potato torte with a surprising ingredient: cheddar!
Preheat oven to 350ºF.
Stir together the cream, salt, pepper, nutmeg and hot sauce.
Peel and slice sweet potatoes into 1/4 inch thick rounds.
In a 10-inch springform pan, place a single layer of sweet potato slices on the bottom. Sprinkle about 2 tablespoons of cheese on top. Drizzle 2 tablespoons of the cream mixture on top. Repeat this for four layers, ending with cream on top.
Cover with foil and bake for 30 minutes. Uncover and bake another 30 minutes or more, until browned on top.
Let stand at room temperature until warm. Remove sides of spring form pan and place on a serving platter.

@JenMitch…4 layers x 2 Tb = about a cup of shredded cheddar if I estimate correctly… You could probably use a little more if you feel decadent!
