It’s a super side dish that I know you’ll be making again and again!
Into a saucepan, add about 1″ of water (enough to steam your cauliflower) over medium-high heat. Bring to a boil. Season with salt. Add the cauliflower and cook until tender (just a few minutes). When tender, drain and set aside. WHILE the cauliflower is cooking, in a small sauce pan, melt the butter over medium-low heat. When melted, add the flour and whisk until combined. Gradually add in the milk, whisking as you go. Add in the nutmeg and continue whisking until sauce thickens.
Preheat your oven to 350 degrees. Spray a small to medium ovenproof dish with cooking spray. Place the cauliflower into the dish. Pour the sauce over. Sprinkle the breadcrumbs on top. Season with salt and pepper. Sprinkle the Parmigiano Reggiano on top. Bake for approximately 30-35 minutes until bubbly and golden. Allow to cool slightly before serving.

I love this recipe! My father was raised in northern Italy and a creamy cheese sauce and nutmeg over vegetables is something he was familiar with as a child. Thanks for sharing!

Definitely yummy. The hubby doesn’t like raw veggies, so I’m always looking for new ways to prepare veggies to add to our diet! It was too much nutmeg for me, but still a great dish!

This was a great side dish! Even my daughter who isn’t usually a vegetable eater other than potatoes and corn loved it, infact, she polished off the dish!
