Extreme flavor in this sauce. It would be good over any veggie. I am just on a cauliflower kick!
Preheat oven to 400ºF.
Chop cauliflower into florets. Layer cauliflower onto baking sheet. Sprinkle with kosher salt. Roast for 15 minutes.
While cauliflower is roasting, melt butter in saucepan. Stir in lemon juice, zest and mustard. Heat through and remove from heat.
Remove cauliflower from oven, drizzle sauce over the florets. Place back in the oven for 10 more minutes.
Remove and serve topped with freshly chopped parsley.
