Scrumptious side dish y’all!
Preheat oven to 400ºF.
In a food processor, add cauliflower florets and pulse several times. Add beaten eggs, cream, black pepper, and breadcrumbs. Run processor to combine. Form cakes of desired size and place on a nonstick baking sheet pan. Place into the oven and bake 15 minutes or until golden brown.
For the sauce, in a small saucepan over medium heat, add peanut butter, soy sauce, ginger root, and allspice. Stir to combine and cook until all ingredients are incorporated and creamy, about 6 minutes. Stir while cooking.
Plate cauliflower cakes and drizzle with peanut ginger sauce. Delicious! Great with pork loin roast, pork chops, ham, or beef. Enjoy!
