Description

This is a healthy change from mashed potatoes.

Ingredients

  • 1 head Broccoli
  • 1 head Cauliflower
  • 1-½ cup Stock Or Water
  • 2 cloves Garlic
  • 2 Tablespoons Cream Cheese
  • Salt And Pepper

Preparation

For this recipe you could use 1 large head of broccoli or cauliflower by itself, but I mixed them since the ones we had were both smaller heads.

1. Cut and trim the cauliflower and broccoli into florets and put in a pot with the stock and garlic.
2. Bring the mixture to a boil and cook until the florets are very tender. Remove from the heat.
3. Add the cheese, salt and pepper.
4. You can mash the mixture using a potato masher or you can puree it using a food processor or blender, BUT be careful because blending hot food can make be dangerous.

If you have the time, you can let the mixture cool completely; blend it and then put in a casserole dish and put it in the oven to reheat.

Thank you this recipe. I made it tonight for my family, and they LOVED it. I was looking for a different way to cook the cauliflower and broccoli in my fridge. I only add one thing, tofu. I had a little bit leftover and wanted to use , but it wasn’t enough for a meal. It wad however, enough to add to this yummy dish:D I’m going to make this again and again.

This is such a delicious recipe. It’s super easy to make, low in fat, and high in all the good stuff. My kids (they are 10yr boy, 10yr girl, and 4yr boy) loved it! It’s a great way to use those veggies instead of just boiling them or roasting them. I will make it again for sure!
