Carote con Funghi (Carrots and Mushrooms).
1. Into a deep-sided pan, add butter and oil and melt over medium heat. Once melted, reduce heat to LOW and add onions. Stir to combine and cook until translucent.
2. Add carrots. Stir to combine. Cook for approximately 10 minutes. Add wine and mushrooms. Stir to combine. Cook for additional 10 minutes. If liquid level is low, add up to 1/2 cup water.
3. Add half-and-half, season with salt and pepper. Stir to combine. Cook for additional 10 minutes.
