I first made this to accompany steak and PWs fried potatoes. Delish! There are A LOT of onions in this casserole … don’t be afraid!
Cook carrots until tender; drain and set aside. Sauté onions in oil until they change color. Mash carrots with butter. Mix together with onions, cheese, salt and pepper. Spread into an 8 x 8 casserole dish. Cover with bread crumbs and bake at 350 degrees for 20-30 minutes or until browned.
