A great side dish to eat with a spicy Jerk Chicken!
Saute the chopped onions and garlic in the olive oil for about 7 minutes. Add black eyed peas (drained and rinsed), coconut milk, salt and pepper. Mix well and let it simmer for about 20 minutes or until the coconut milk thickens. I love having this with a spicy chicken dish!
