Squash & Zucchini with jalapenos, tomatoes & cheese
Prep:
Slice squash & zucchini into rounds not too thin
chop onion
seed & chop jalapenos
core tomatoes & remove seeds, then chop
Directions:
Saute chopped onion & jalapeno in butter for 2 minutes, then add minced garlic and saute for 1 minute.
Next add zucchini & squash and stir together. Saute for 15-25 minutes until squash & zucchini become tender, stirring occasionally.
Remove from heat, add tomatoes, salt & pepper to taste. Stir in cheese & serve.
You could also use green chiles or habaneros.

I tried this tonight for dinner using veggies from the farmer’s market. It turned out really good, my husband and I both really liked it and I will try this recipe again!

Your picture looks really great. I make something similar and yes, add green chiles when in season. Try topping with cilantro.
