Well, here we are in January and facing a few extra pounds due to December’s festivities. Tammie and I thought we’d trim down the calories in our January recipes for you and for ourselves! Here’s an easy, inexpensive veggie fix that I found very satisfying. It makes a great side dish or a warm, healthy snack.
Heat a skillet to medium-high and spray with oil. Stir fry the coleslaw mix until soft (about 5-6 minutes). Stir in the mayonnaise, vinegar, dry mustard, and salt.
Transfer to an oil-sprayed cookie sheet and spread out in a thin, even layer. Sprinkle the blue cheese crumbles on top. Bake at 375ºF for 20 minutes.
