Description

Excellent side dish for any holiday meal.

Ingredients

  • 10 whole Yukon Gold Potatoes, Peeled, Cubed
  • 1 teaspoon Sea Salt (for Boiling Water)
  • 1 stick Lightly Salted Butter, Softened
  • 1 cup Sour Cream
  • 1-½ teaspoon Fresh Crack Black Pepper
  • ½ cups Plain Bread Crumbs (or Panko)
  • Fresh Chopped Parsley, For Garnish

Preparation

Preheat oven to 400ºF.

In a large pot, add water until 3/4 full and bring to boil. When boiling, add salt and cubed potatoes. Cook 15 minutes or until fork-tender. Drain potatoes and place in a large mixing bowl.

In a small frying pan, add softened butter and set heat to medium high as the butter bubbles and begins to turn brown. Remove from heat (do not burn butter). Add to cooked potatoes along with sour cream add black pepper. Using a hand mixer, cream potatoes.

Transfer to a nonstick baking dish, smooth out with a spatula. Add bread crumbs or Panko to the top and place into the oven. Bake 15 minutes and garnish with fresh parsley.
