I am a Southern girl at heart and nothing beats braised greens to serve as a side dish with beef.
After the greens are washed, remove the stems and slice the greens into strips. Put the greens into a large, microwave safe bowl and add the water. Seal the bowl closed with plastic wrap and microwave on high for 5 minutes.
In the meantime, preheat a large, heavy skillet over medium heat and cook the bacon pieces until lightly browned. When they are done, remove the bacon to a paper towel lined plate to drain. Add the olive oil into the skillet with the drippings and cook the onion until soft. Then add the greens into the skillet and also stir in the vinegar, syrup, pepper flakes and broth. Cover and simmer for 30 minutes. Add salt and pepper to taste.
Add the bacon back to the greens before serving.
