The Swiss cheese adds a nice flavor to this wonderful potato casserole.
In a large bowl, combine the potatoes, sour cream, 1 cup of Swiss cheese, cheddar cheese, carrot, onion, parsley, salt, dill and pepper. Transfer to a greased 8-in. square or 11 x 7-in. baking dish. Sprinkle with the paprika and remaining Swiss cheese. Bake, uncovered, at 350ºF for 30-35 minutes or until bubbly.
