Oh, if only I had the words to explain the absolute party that happens when I’m shoving a hefty spoonful of mashed potatoes in my mouth. I’m going try though. To put it simply, they rock. So delicious and easy to make.
Clean, skin and chop potatoes (I cut mine into quarters).
In a large pot, add chopped potatoes. Fill pot with enough water until potatoes are covered. Bring to boil over medium-high heat and cook until potatoes are tender and fall off when pierced with a fork, about 25–30 minutes. Drain water, leaving about 1/4 cup water remaining in pan.
Add butter, onion powder and almond milk. Mash or use an immersion blender until smooth.
Top with your favorite toppings!
