Description

Roasted broccoli, with peppers and garlic mixed with olive oil and lemon juice.

Ingredients

  • 2 bunches Broccoli
  • 1 whole Red Pepper
  • 1 whole Yellow Pepper
  • 4 cloves Garlic, Chopped
  • 5 Tablespoons Olive Oil
  • Salt And Pepper To Season
  • Handful Of Grated Parmesan Cheese
  • Juice From Half A Lemon

Preparation

• Preheat oven 200 degrees

• Chop broccoli into florets, make sure the broccoli is completely dry – if not pat with kitchen paper

• Chop red and yellow pepper into rough chunks

• Roughly chop garlic cloves

• Place broccoli, peppers and garlic into a roasting tin

• Add the olive oil and generous sprinkling of salt and pepper and toss all together

• Roast in the over for about 25mins (or until some of the tops of the broccoli turn brown)

• Remove from the oven and sprinkle a generous handful of the parmesan over the top of the broccoli mixture add the juice from half a lemon

• Mix, serve and enjoy! :)

Is that oven temp. right? I roast my veggies all the time and 200 just isn’t gonna do it. You may want to correct that.

Being a veggie hater I’m always on the prowl to find a recipe that makes them taste like chocolate…

I absolutely LOVED this dish!!! The colors were wonderfully inviting and the taste of the veggies didn’t disappoint – I’ve added it to my list of favorites.
