It’s hard to make beets elegant. However, this five-ingredient recipe comes as close and as yummy as I’ve seen!
Boil beets in salted water until tender (about 35 minutes). Drain, and cool in refrigerator until ready to prepare dish.
While beets cool, mix yogurt/cream with chopped chives and set aside.
Rub skins off beets. Cut beets in chunks or slices. Toss beets with olive oil, salt and pepper. Top with a dollop of the cream mixture.
Serve immediately.
