Balsamic Roasted Brussels Sprouts with Bacon & Onion Jam.
Preheat oven to 400ºF.
Meanwhile, toss Brussels sprouts in olive oil, garlic, half of the balsamic, half of the onion jam, salt and pepper and place in an oven-safe dish. Allow Brussels sprouts to roast in oven for 35 minutes.
Add remaining balsamic, onion jam, and bacon. Give it a good toss and put back into the oven for 8-10 more minutes.
Top with freshly grated Parmesan and serve.
