I love asparagus in the spring! Asparagus is a healthy side vegetable rich in calcium, folate, fiber, vitamin C and vitamin K. Here is a simple roasted version with balsamic vinegar.
Preheat oven to 400ºF. Line a large baking sheet with parchment paper. Line up the asparagus on the baking tray and coat with olive oil and vinegar. Sprinkle with sea salt. Bake 10–15 minutes, or until tender.
