Creamy mashed potatoes with a kick. Something different from the same old potato.
Start by boiling a large pot of salted water. Wash the potatoes well and, leaving the skin on, chop into medium-sized pieces. Add to the boiling water and cook until you can easily pierce them with a fork. Once cooked, drain the potatoes and add back to the pot or a separate bowl.
Add the butter, sour cream, sea salt, pepper, garlic powder, and balsamic vinegar to the potatoes. Mash with a potato masher. If you like your mashed potatoes chunky, mix in the green onions and serve them now. If you like them smoother, use an electric hand mixer to smooth out the chunks, then mix in the green onions and serve.
